A hearty African vegetarian stew with kohlrabi, sweet potatoes, zucchini, tomatoes, chickpeas, raisins, and warm spices.
Ingredients
kohlrabi, sm, peeled, cut into chunks | 4 | |

onions, lg, chopped | 1 | |
raisin, dark or golden | 0.25 | cupcup |
sweet potatoes, peeled, cut into chunks | 2 | |
coriander, ground | 1 | tspteaspoon |
cinnamon, ground | 0.5 | tspteaspoon |
ginger, ground | 0.5 | tspteaspoon |
turmeric, ground | 0.5 | tspteaspoon |
cumin, ground | 0.25 | tspteaspoon |
zucchini, sliced thick | 2 | |
tomato, fresh | 5 | |
chickpeas, canned, chickpeas with liquid | 15 | ozounce |
tap water | 3 | cupcup |
Directions
1. Combine all the ingredients in a large saucepan 2. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes Notes: 1. Serve the couscous separately, if desired 2. Parsnips may be substituted for the kohlrabi
