Description

A hearty African vegetarian stew with kohlrabi, sweet potatoes, zucchini, tomatoes, chickpeas, raisins, and warm spices.

Ingredients

kohlrabi, sm, peeled, cut into chunks

0.5cup
onions, lg, chopped

raisin, dark or golden
0.25cup
sweet potatoes, peeled, cut into chunks

coriander, ground

cinnamon, ground
0.5tsp
ginger, ground
0.5tsp
turmeric, ground
0.5tsp
cumin, ground
0.25tsp
zucchini, sliced thick

tomato, fresh

chickpeas, canned, chickpeas with liquid

tap water

Directions

1. Combine all the ingredients in a large saucepan 2. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes Notes: 1. Serve the couscous separately, if desired 2. Parsnips may be substituted for the kohlrabi
